Just made this tonight and had great reviews.  We love pumpkin bread at our house! 

Weird!  I can't get that bold and underline to go away! 

Pumpkin Bread


2/3 c. shortening

2 2/3 c. sugar

4 eggs

2 c. pumpkin

2/3 c. water

3 c. flour

2 tsp. Soda

1 1/2 tsp. Salt

1/2 tsp. Baking powder

1 tsp. Cinnamon

1 tsp. Ground Cloves

 

Heat oven to 350 degrees.

Grease (2) 9x5x3 in. loaf pan.

In a large bowl, cream together shortening and sugar until fluffy.

Stir in eggs, pumpkin and water.

Blend in flour, soda, salt, baking powder, cinnamon and cloves.

Pour into pan and bake for 70 minutes or until a toothpick comes out clean.

Thank you, my new favorite person! LOL!

I will make this for sure but I do have a question about the pumpkin. Do I cook it first? I've never made anything using fresh pumpkin before, so I have no idea. (shameful, I know..... )

You said you have 2 cups...how did you come into this pumpkin?  Is it a whole pumpkin?  If yes, slice it in half, dig out the gunk, then place round side up on a baking pan with sides, bake at 350 for at least an hour.  Once cooked, allow to cool and then pull off the skin.  If you have a sieve, use that to mush the pumpkin and get the remaining stringy parts out and any skin you couldn't peel off.

If someone gave you two cups of mushed pumpkin, I'm thinkin' it must have been cooked beforehand.

LOL! thanks Carli. It's a whole pumpkin. I found out the answer already, though. (yes, I did need to cook it first). ;-)

I'd never used fresh pumpkin before, so I wasn't sure. I cooked it yesterday but have not made the bread yet. Probably will tonight. My ds is really wanting to try some.
